Orange Cake

Refreshing Orange Zest Cake




150g butter
150g sugar
150g self raising flour (170 g plain flour plus 11g baking powder 4g salt)
3 eggs
Rind of two oranges
Juice(1 orange )
Milk(1/2 cup)
1 tsp Vanilla Essence
Icing sugar to dust.

Method.
1. Preheat the oven to 170°C.
2. Beat the butter with the sugar until
white and fluffy. Beat in eggs one at a time and mix well. Then add in vanilla
essence,orange juice and rind .
3. Lastly fold in sifted flour into
the butter mixture,alternate with milk and mix well. Pour into a greased and lined cake tray and
bake for about 40 mins
