Traditional Cupcake Recipe

Quick and easy cupcake











This is from a really old Women's Weekly cook book ,they always turn out perfect!

Cupcakes

125g butter
1 tsp vanilla essence
150g caster sugar
2 eggs
170g all purpose flour,12g baking powder and pinch of salt
120g milk

Cream butter, essence and sugar in small bowl with electric mixer until light and fluffy. Beat in eggs one at a time, beat until combined. Stir in half the sifted flour and half the milk, then stir in remaining flour and milk. Pour mixture into 8 patty pans

If you wish,sprinkle some finely chopped nuts over them.

Bake for 15 minutes in a moderate oven 190-200, or if you want them 'peaked' slightly, increase to moderately hot (210-220)
