Char Kway Teow(Stir Fried Flat Noodles)

Penang Char Kway Teow




Ingredients

100g koay teow (loosen the noodles)

10 g bean sprout ( cleaned)

A handful of koo chai(chives)

5-6 medium size prawns- peeled without head

Soy sauce/black sauce/pepper

Chilli paste

Handful of cockles

1 egg

Crushed/finely chopped garlic



Instruction

1 Heat 1 tablespoon of oil until hot, add in prawn

2 When prawn start to be cooked ( good fragrant), add in loose noodles

3 Fry quickly so noodles will not stick- add soy sauce and black suace (sprinkle some water)

4 Continue frying, at times, lower flame ( have to control the heat)

5 Crack egg and when half cook, break and mix with noodle

6 Add chilli paste ( depends on how hot one prefers)

7 Fry till semi dry – add cockles, stir quickly, then add bean sprout and koo chai

8 Tossed quickly, turn fire off
