Curry Mutton or Beef

A Different way to cook curry ( mutton or beef )
Try Papa's special curry mutton/beef.It's so delicious!




Normally, one would fry the curry paste till it is fragrant before adding on the meat. But in this case, we boil the meat first. This is so, when the meat one has is relatively tough to cook.

Ingredients

500-600 gram of meat ( cut into smaller pieces)

1 medium size onion ( finely chopped)

1 small tomato ( finely chopped)

4 cloves of garlic ( finely chopped)

Half teaspoon of ginger powder

Half teaspoon of salt

Half teaspoon of pepper

Half teaspoon of cumin powder

Half teaspoon of corriander powder

Half a stick of cinnamon stick

Quarter teaspoon of turmeric

2 tablespoon of curry powder

1 tablespoon of red chilly powder

6 grains of cardamom

Half teaspoon of serai powder

Pinch of drird pink ginger

Quarter teaspoon galangga powder

50gm of yougurt

50 gm of tomato paste

200 litre of milk

2 fresh chilly ( de-seed and sliced into half)


Method

1 Boil the meat in 300 litre of water ( add in some salt) for about 20-25 minutes

2 While boiling add the onion, garlic, tomato.

3 Add about 2 tablespoon of oil

4 Then add the serai, dried pink ginger, galangga, turmeric, ginger powder,cumin, corrainder, curry powder, red chilly powder, cardamom and cinnamon stick

5 Stir to allow ingredients to mix well

6 Then add the milk, tomato paste and yogurt

7 Continue stirring and allow to simmer after 25 minutes ( till the oil floats on top of the curry)

8 Add the 2 sliced chillies

9 Salt or soy sauce or sugar to taste
